Shortbread Cookies
- 1 stick butter
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla
- 3/4 cup flour
- 1/4 cup rice flour
- 1/8 teaspoon baking powder
- 1/8 teaspoon salt
- 1 teaspoon cinnamon
Directions
- Cream 1 stick of butter with 1/4 cup powdered sugar. Add 1/2 teaspoon vanilla.
- Work in 3/4 cup flour with 1/4 cup rice flour, 1/8 teaspoon baking powder, 1 teaspoon cinnamon, and 1/8 teaspoon salt.
- Pat dough into 8 inch circle on cookie sheet. Score the dough.
- Bake for 20 minutes at 375 degrees.
